Easy Gluten Free Fried Chicken Nuggets
Fried chicken has always been one of my favorite meals. Even as a child, it was between fried chicken or pancakes for my birthday dinner. Now that I have my own children, it is still a favorite among them as well. Sometimes, fried chicken can become cumbersome and messy to make. I have come up with an easier method to make fried chicken with one bowl and one pan.

I decided to start making nuggets because they are easier to work with and they take less time to cook. Sometimes, I still make strips or thighs, but the process is the same.
Here's my process for making Easy Gluten Free Fried Chicken Nuggets:
#1 - Start heating the pan with Olive Oil on medium heat
#2 - Cut up your chicken breasts into nugget sizes
#3 - Put chicken in a large bowl
#4 - Get out 2 eggs and rice flour
#5 - Put the eggs in the bowl with the chicken
#6 - Mix eggs in with the chicken making sure that all of the nuggets have been covered
#7 - Pour some rice flour over the chicken. I usually start with 1 cup and then add more as needed.
#8 - Mix the chicken with the flour making sure that all of the chicken is coated nicely
#9 - Put chicken nuggets into the pan with the hot oil
#10 - Salt and pepper to taste
#11 - Cook nuggets while turning them every 5-8 minutes. They are fully cooked when they are brown on all sides. We like them extra crispy, so I always cook mine a little longer.
